Famous sommelier Richard Betts and wine enthusiast Dennis Scholl have joined forces with wine innovator Charles Bieler to solidify their expertise in an outstanding mezcal spirit. After combining an over two centuries old ancient production technique with incomparable pure hand-harvested single variety Espadin agave, sourced from the steep slope of the Oaxacan Sierra, the artisan spirit Sombra is close to its completion. After the agave piñas were roasted in an earthen fire pit, crushed with a horse-drawn circular stone and undergone a time demanding wild yeast fermentation step, the Sombra tequila is able to unfurl its complex citrus, spicy and serious smoky flavors paired with a smooth finish that together convey a distinct sense of adventurous euphoria to the candid sommelier.
